Interview with Lucy Bee, owner of the Lucy bee Coconut Oil brand, by The Health Carpenter.
Lucy is a 24 year old, CIBTAC qualified beauty therapist with a love of healthy living including eating foods close to nature and exercise. 1. Tell us a bit about yourself!
I’m 24 and a CIBTAC qualified beauty therapist with a passion for healthy eating. As a baby I was really ill then at 18months old diagnosed coeliac so my parents were forced to look at the foods we ate. This led to them (and then me) checking ingredients in everything and cooking from scratch.
Because I’ve grown up doing this, it’s second nature for me to eat natural, healthy foods. I’m fascinated by the healing power of foods having witnessed it first-hand and love learning the benefits of the food i eat. I exercise regularly too, again because I know I feel good when I do.
2. What made you start Lucy Bee?
As a family, we were introduced to unrefined coconut oil in 2007 by a family friend from Hong Kong. She gave us Bruce Fife’s book ‘The Coconut Oil Miracle’ to read and we realised that this was a healthy natural fat that we should include into our daily diet. An ideal substitute for processed oils in cooking.
My dad already imported a brown rice, gluten free pasta so we looked into sourcing a top quality coconut oil so that we could share our new found passion with everyone else!
However, there were a few things that we wanted to achieve. Our coconut oil would have to be raw, organic and unrefined as we strongly believe in eating foods that are as natural as possible. We also believe that it’s important to support the producer families so, we would only consider buying our oil Fair Trade certified.
Once you start trying different coconut oils, you soon realise that they taste different depending on where the coconuts are grown and also the extraction method used. So we have fun when sourcing coconut oil in tasting different ones and will only consider them if each of the above boxes are ticked!
3. If you were not working on this fabulous product – what would you be doing?
I would be lying on the beach, relaxing in the sunshine! Ok, back to reality…… I would be doing more with my beauty business as there’s always new training and treatments to learn about.
At some point, I would love to study nutrition to increase my knowledge of foods, their benefits and how they work with the body. This is definitely on the cards.
4. Can you give our readers your favourite top health tip?
Everyone is different but I think it’s important to listen to your body, see how your body reacts to certain foods and learn what is best for you. Being coeliac, I don’t eat any gluten and I avoid processed foods and prefer not to eat too much dairy – that’s my personal choice.
I think the key is to eat as natural as possible and exercise regularly – I definitely feel better for doing this!
5. Is there anything else you’d like to add?
Yes there is…… I’m SO excited to announce that Lucy Bee is bringing out a cookbook in September 2015! Our dream is becoming a reality!
It’s been an amazing few months and we’re currently shooting for it which is incredibly exciting. I just can’t wait for what’s to come! It’s wonderful to be able to share our favourite selection of recipes with everyone.
